by Bonnie Carroll

Katsu Kibe was raised in Tokyo, Japan. While still in high school he took a part time job in the kitchen at an Italian restaurant and was hooked on cooking and went on to attend culinary school following his graduation from high school. In 1987 he flew to France and worked as an apprentice at the Hotel Lann-Roz on the Bourtagne Island, where he learned classical French cuisine. In 1990 he few to Los Angles to work in the Chaya Brasserie, Beverly Hills. He opened the Chaya Venice and became a master at “California Cuisine.” In 1993 he went back to Tokyo, but was called back for the opening of Chaya Brasserie in San Francisco. Currently Chef Kibe is Chef de Cuisine at Chaya Brasserie, Beverly Hills, located on Alden Avenue, where his preparation and presentation of unique dishes is renowned.

Chaya Brasserie is an extremely popular restaurant, with a reputation for fabulous healthy gourmet Asian dishes, and a star-studded guest list. The décor is zen contenmporary, but comfortable, and is always alive with people who enjoy the original and delicious menu offerings that surprise and delight first time visitors. I have attached a recipe for my favorite dish at Chaya Brasserie, and I hope you enjoy it. For reservations call 310-859-8833.
